Healthy Banana Blueberry Muffins (Recipe!)

Last night, I was doing dishes and looked over at the sad bowl of fruit. My bananas NEEDED to be used. They were very brown and needed to either be baked up in some delicious bread or they were going to be thrown away. I really didn’t want to throw them away, so I decided to make my own muffin recipe and just go with it. If they turned out great, then great. If not… well they would end up in the trash. It couldn’t hurt to try!! I love baking muffins for breakfast or even for a nice, healthy snack throughout the day! The kids love them and Aubrey calls them cupcakes. 😉

Healthy Banana Blueberry Muffins

1/4 cup all purpose flour
1 cup oat flour (I made this myself!)
1/4 cup old fashioned rolled oats
1/2 cup unsweetened applesauce
1 tablespoon sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 ripe, mashed bananas (4 if you really want a strong banana flavor)
1 egg
1 teaspoon vanilla
handful (or 2 or 3) of fresh or frozen blueberries

Preheat your oven to 375 degrees. Ground up 1 cup of old fashioned rolled oats using a blender, food processor, or even a baby food maker until fine. Combine all ingredients and mix it up well. Fill muffin cups 3/4 full. Bake in the oven for 20-25 minutes. Let cool for a few minutes and then remove them from the muffin pans to cool on a cooling rack. Makes about 18 muffins.

These muffins were sooooo good! And they’re super healthy for you too with lots of fiber! The kids loved them! I love experimenting with recipes and I think next time, I’ll leave out the blueberries and use my homemade cinnamon applesauce instead of the unsweetened kind.
